Why I LOVE Sundays + New Recipe

At 10 years old, Sundays meant that school was the next day and I absolutely dreaded that idea.
Nearly 13 years later, I can’t think of a better day of the week.
Don’t get me wrong, I don’t necessarily love the idea of resuming “real life” the next day… but I truly appreciate the peace and quiet (especially being an introverted homebody) that comes with the day. I generally celebrate the day by sleeping in, eating, baking, online shopping, and some more eating. So on this beautiful Sunday, I snuggled up in bed, ate chocolate, checked off a few to-do’s on my forever long list, and made a new recipe aka my fave part.

Enter Cinnamon Apple & Chocolate Biscuits.

I was inspired by the original recipe on Russell Stover’s website because it just seemed like the perfect breakfast that would make it feel like fall since Louisiana forgot about that season. I even made an attempt a making the biscuits from scratch, although that was a win in the taste and a fail in the looks.

The biscuits were surprisingly simple to make! I used 2 cups of flour, 1 tablespoon of baking soda, 1 tablespoon of cinnamon, and 1 teaspoon of salt. I mixed it and then added 1/2 cup of Crisco butter flavored shortening. When it formed coarse crumbs, I poured 3/4 cup of milk into the mixture. It should form a ball-like shape. At this point, I also accidentally overworked the dough. Please don’t make the same mistake I made because although the taste was great, the biscuits were flat and did not rise! šŸ™

When I was finished with forming the dough, I set it on a lightly floured surface and tossed it with flour until it was no longer sticky. I used my hands to gently press it out to a 1/2 inch-1 inch thick layer. While that was sitting, I peeled and cut one granny smith apple and one golden delicious apple into small sections. I also thinly sliced a few layers to place on top of the biscuits. Side note: I used the Cutco 2-3/4″ paring knife and the vegetable peeler to make my life easier.

I combined the apples with the dough and cut the dough into small circles. I baked them for 15 minutes at 450 degrees. Just when you thought the apple and cinnamon biscuit sounded good, I topped them with pieces of the the Russell Stover Pecan Delight chocolates when they came out of the oven! Just that one ingredient in the recipe made breakfast taste like dessert, which is Heavenly.

Recipe:
ā€¢ 2 cups of flour
ā€¢ 1 tablespoon of baking soda
ā€¢ 1 tablespoon of cinnamon
ā€¢ 1 teaspoon of salt
ā€¢ 3/4 cup of milk
ā€¢ 1 golden delicious apple
ā€¢ 1 granny smith apple
ā€¢ Russell Stover Mini Milk Chocolate Pecan Delights

Preheat oven to 450 degrees F.
In a large mixing bowl sift together flour, cinnamon, baking powder and salt. Add shortening with fork or pastry blender until mixture resembles coarse crumbs.
Pour milk into dry mixture while stirring with a fork. Mix in milk until dough is sticky and forms a ball-like shape.
Peel and cut one granny smith apple and one golden delicious apple into small sections. Thinly slice a few layers of the apples.
Place dough onto a floured surface and toss with flour until no longer sticky. Roll dough out into a 1/2 inch-1 inch thick sheet, sprinkle apples on top, and cut with a cookie cutter (I used a knife and cut circles).
Place thinly sliced apples on top of the cut biscuits.
Place biscuits on ungreased baking sheets and bake in preheated oven until golden brown, about 15 minutes.
Add pieces of Russell Stover Pecan Delight chocolates on top.
